Making vegan banana muffins
- In a large bowl mix together the sugar and one of the bananas together until well combined.
- Add the melted butter, applesauce, and vanilla to the batter and mix well.
- Mix in the flour, baking soda, and salt until just incorporated.
- Mash the remaining banana with a fork on a small plate. Fold into the batter.
- Scoop the batter into the muffin pan, fill them 3/4 of the way.
- Bake for 20-25 minutes until a toothpick stuck in the muffin comes out clean.

Vegan Banana Muffins
The best vegan banana muffin recipe.
Ingredients
- 1/2 cup sugar
- 2 bananas
- 6 tablespoons vegan butter
- 1/4 cup applesauce
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees F.
- Lightly spray a muffin tin with non-stick spray.
- In a large bowl mix together the sugar and one of the bananas together until well combined.
- Add the melted butter, applesauce, and vanilla to the batter and mix well.
- Mix in the flour, baking soda, and salt until just incorporated.
- Mash the remaining banana with a fork on a small plate. Fold into the batter.

Notes
The riper the bananas the sweeter the muffins will be. If you would like to add chocolate or nuts to this recipe mix 1/4 cup into the batter at step 6.

These are literally the lightest and fluffiest muffins ever!! I add 2TBSP of ground flax to the mix. My kids love them. It makes a small load or about 8 small muffins.
